Future of Food Summit 2026

The Future of Food Summit is a one-day, open-to-all industry exhibition designed to connect chefs, hospitality leaders, and plant-based innovators who are shaping the next era of sustainable gastronomy. Hosted on the final day of Luma Institute’s Sustainability in Hospitality program, the summit serves as a meeting point for ideas, collaboration, and cutting-edge food solutions that align with global sustainability goals.

This is not just an exhibition — it is a live ecosystem where culinary talent, emerging food brands, and conscious consumers come together to explore how India’s food system can evolve toward a healthier, inclusive, and climate-smart future.

Luma Working Groups

Frontier innovation powering sustainable food systems.

Science

The global food system stands at the center of our climate trajectory, responsible for a significant share of emissions, biodiversity loss, and resource depletion. Meeting the demands of a rapidly growing population—while staying within planetary boundaries—requires a new generation of scientific thinking that integrates ecology, nutrition, materials innovation, and carbon intelligence. At Luma Institute, we focus on emerging scientific frontiers that can unlock scalable climate solutions: plant-forward protein systems, circular resource cycles, next-generation fermentation, and low-impact culinary technologies. These innovations form the backbone of a resilient, future-ready food ecosystem—one capable of powering sustainable growth across the Global South and beyond.

Building talent ready for a climate-aligned food future.

Education

Traditional hospitality and culinary education is no longer sufficient for the world we are entering. The next wave of talent must understand carbon literacy, inclusive design, regenerative sourcing, and the science of climate-smart operations. Luma Institute is building a new standard of education—bridging global research, industry insights, and hands-on learning to equip professionals with competencies aligned with Net Zero pathways. Our programs are designed to be catalytic, not incremental: enabling learners to design carbon-smart menus, navigate emerging food technologies, and contribute meaningfully to climate resilience. We are not just training chefs; we are cultivating the next generation of sustainability leaders across hospitality, foodservice, and agriculture.

Scaling solutions that redefine global food production.

Industry

Transforming the food system requires more than awareness—it demands deep collaboration between innovators, manufacturers, policymakers, hospitality leaders, and scientific institutions. Luma Institute operates at this intersection, advancing climate-aligned practices across restaurants, hotels, food-tech startups, and supply-side ecosystem players. We focus on neglected but high-impact levers such as plant-based transitions, clean-label ingredient innovation, low-emissions procurement, and circular waste systems. These interventions offer nations and businesses an opportunity to decouple growth from emissions—unlocking competitiveness, resilience, and long-term value. By aligning global best practices with India’s unique context, Luma is positioning itself not as a follower, but as a catalyst shaping the future of sustainable food systems across the Global South.
